Spontaneous product par excellence, the truffle is a live mushroom which develops underground in symbiosis with the radical apparatus of certain plants and the Marche are one of the few Italian regions where one can encounter all the most significant species of truffle.TARTUFO
The "Tuber magnatum Pico" or white truffle is valuable and the king of truffles, is found primarily in the “Pesarese” zone, (Acqualagna, Sant'Angelo in Vado e Sant'Agata Feltria), but also in other provinces.
Notable also is the presence of the valued black truffle, in the Pesarese and Maceratese zones, and of the black summer truffle or “scorzone”, more widespread which can also reach large dimensions.
Of all the fruits that nature presents us, let us remember with interest the walnuts of Acquasanta Terme, of Roccafluvione and of Montefeltro and the “visciola”, a rustic and bitter cherry used both ins the preparation of the characteristic wine as well consumed when dried out or soaked in spirits such as the Amara of Cantiano.
Also worth mentioning is the “monteluponese” artichoke, the onion of Suasa, the taccole (type of pea) and the “gobbo” of Trodica, products which identify themselves with the land on which they grow and which are often protagonists of seasonal festivals.
